What you need

cup full fat milk

tbsp unsalted butter

lb sweet potato

tbsp kosher salt

cup maple syrup

tbsp bourbon

tsp nutmeg

tsp cinnamon

0 First off, infuse your milk and butter with herbs. Warm your milk to a light simmer. Add the thyme and rosemary and allow to infuse for 30-60 minutes. Strain and discard the herbs, before using. 1 Bring a pot of salted water to a boil. Meanwhile, peel and cut the sweet potatoes into 1 inch cubes. Once the water has come to a boil, add the sweet potatoes and cook until tender, about 20-30 minutes. 2 Drain the potatoes and place them in a medium sized bowl. Using a potato masher or a hand mixer, mix the potatoes until smooth. 3 Slowly pour the infused milk into the potatoes while mixing.
