0 Begin by giving your sourdough starter a good feed. A healthy, active starter will freeze best. Feed it as you normally would and let it reach its peak activity. 1 If you have a large quantity of starter, consider dividing it into smaller portions. A silicone ice cube tray or mold filled about ⅔ of the way full is perfect! This way, you can thaw only what you need, when you need it, without having to defrost the entire batch. 2 After the sourdough starter is frozen, remove it from the silicone tray and place it in a freezer-safe container with a tight-fitting lid or a zip-top freezer bag. 3 Clearly label your container with the date of freezing.
